Hand-cut dumplings of roasted pumpkin, potatoes and ricotta.
Ingredients: potatoes, pumpkin, cake flour, potato starch, yolk, salt
Allergens: wheat, eggs
roasted butter, sage
demi glace duck, caramelized pear
pork tenderloin, dried plum
Cooking method: put frozen gnocchi in boiling water and simmer for about 2 minutes. Put one part by volume of the product into two parts of water so that the temperature does not drop and the product does not lose its consistency.
Meanwhile, prepare the lard in a separate pan. Add a few tablespoons of cooking water and then transfer the gnocchi straight from the boiling water to the pan with the lard. Shake the gnocchi with the lard and cook for about 1 minute until the lard is thickened.
The shock-frozen product maintains perfect freshness and quality.
